It is customary to eat foods on Chanukah that have been cooked in oil. There is a tendency to overdo this. Have latkes and enjoy them, but they don't have to drown in oil, and they don't have to be eaten in mass quantities every day. The holiday commemorates the salvation of the spiritual quality of our nation, and our manner of celebrating, including eating, should reflect that. It is also good to use a healthier type of oil. Extra virgin olive oil is particularly healthy in small quantities. Canola oil is also a good choice.
